The end of average bars

The old rule was: Be average. When there were only a few bars, you had to aim for the fat center of the bell curve. All you had to do was make average drinks and give average service for average people You could do this, because people had no other choice. Now that everyone knows how to make a Daiquiri and smile. The media is customised by algorithms. People have options. When people have options they are going to choose the specific exact thing they actually care about. This means you no longer have to be everything to everyone. You can't. There is no longer average taste. There is no longer the newspaper or the radio telling everyone what is good or bad. When everyone can go anywhere, people crave a reason be somewhere. A bar now have the priviledge to serve a new generation of people. People who choose the bar because the bar, not because it is the only one in town. The new advantage is specificity. Dead is generality.
